Nicolas and I was talking over the phone when and where to meet to have him invited as our next Rad Chef. His schedule is packed, therefore we had one chance to catch him in Riksgränsen for the 20 years reunion The King of Hill. It was a challenge because many things going on at the same time. Finishing his new movie Fruition, the Banked slalom event and the Memorial of Craig Kelly.

We rode so much that we had to make it happen at the last day after all was finished. Nico brought most of his ingredients that he wanted to cock with from home.

Especially the organic stuff and like Shia seeds. Thanks to Riksgränsen resort we got the full kitchen and restaurant reserved just for us. Nico’s high ambitions for his task as the Rad Chef was a big challenge .He got free hands to invite his dinner guests and it ended up being 13 friends with Ingemar Backman as a special honour guest. We started cooking a Raclette cheese on the rocks in the backcountry, with a beautiful run down in the Nordic sunlight.

Arriving to the restaurant after 6 a clock in the evening, we had a lot to do.  Nico showed great skills to delegate and organize the extra hands from Martin and his film crew all together making a great chef team.  Presentation of the menu gained extra points which turned out to be a 7 course menu plus a surprise cake for Ingemar and the celebration for his King of the hill.

With the difference of other chefs, Nico had the time to eat every dish with the guests at the table. We all agreed upon a fantastic dinner, and also the latest one finished 2.30AM. So thanks to Daniel marketing director in Riksgränsen to have the patience with us and while waiting even felt a sleep.

With only a few hours left until boarding his flight back to Switzerland. Nico our Rad Chef left me with warm feelings, his passion and personality is unic

A perfect ending of a fantastic week, with memories for life.
