Saas Fee has always been something special to me, to breathe the air feels like being in a chewing gum commercial. Surrounded by the high peaks. To watch the stars at night is magic. With no cars allowed in the village it´s calm and quiet. This place is well known and respected by mountain people around the world.

For me, Freddie was my first choice as a guest to invite to our show. It was a while since we met when I had the pleasure to be invited for a Swizz Raclette in his home a few years back. Already there I could see so much of his personality shining through within his cooking, like his accuracy in detailed finesse and passion. Fredi´s Raclette of course became upgraded with curry and banana.

To give one of Switzerland’s most traditional dishes his personal twist also displays that Fredi do things in his own way. This time cooking with him was awesome, in his home meeting his lovely wife and son. He was well organized, with his ingredients shopping list getting everything in place for the 3 course menu. As well good timing in his cooking and aware of the clock.

The salad was fresh with a blend of texture and variety of carrots mushrooms etc., lifted with a splendid matched salad dressing. His choice of vegetarian main course was smooth and followed by his amazing raspberry and pear pie that was heavenly served with black Swizz coffee on the side. The evening was completed and our first Radchef was crowned.

I highly recommend Fredi´s menu and I will definitely cook it when I am back home again.
